From the heart of Andalucia, south of Cordoba, in the Denominacion Montilla-Moriles is the fully organic estate of Bodegas Robles. Their fino is a pale straw yellow colour with aromas of hazelnuts and freshly baked bread. Its high alcohol level is obtained naturally thanks to the high sugar content of the 'PX' grape but this is a dry, slightly savoury sherry-like wine with a lengthy finish. Made using the traditional 'solera and criadera' barrel aging system. It's perfect as a dry aperitif with cheese, nuts or olives and also partners seafood and most rice dishes. Serve cool and consume within 3-4 weeks of opening.
